What I'm Baking
We may not have room in the house for a christmas tree, but there's always room for MORE COOKIES! Today I made "Pecan Butterballs," recipe courtesy of Julie Merholz.
These are basically like pecan shortbread - with just enough flour to hold the butter and nuts together. I over-ground the nuts a little in the blender and ended up with chunky pecan-butter, which made the cookies very delicate - and yummy!

2 cups finely chopped pecans
2 cups flour
1 cup butter softened
1/2 cup sugar
2 teaspoons vanilla
1/4 teaspoon salt
Box of powdered sugar
Combine pecans, flour, butter, sugar, vanilla and salt.
Mix with fork or hands until well blended. Shape into
one inch balls and bake on ungreased cookie sheets
in preheated 325 degree oven for 20 to 25 minutes.
Cool before shaking gently in a plastic bag of powdered
sugar.
